8 oz of self raising flour
3 oz butter
2 eggs
sugar to taste (the more bananas the less sugar or you can omit altogether)
bananas (the riper or blacker the better) about 3
walnuts or pecans or dates or whatever you like in tea breads
You need a loaf tin (about 8 inches long 3 inches) wide, all prepared ie greased and you can put old butter papers on the bottom if you like using old butter papers!. Cut up the butter and rub into the flour. Mash up the bananas and then whisk up the eggs. Add bananas and eggs to the flour mixture. Add sugar and walnuts or whatever you like to add. Put in a moderate pre-heated oven (about Gas 6). Cook for 45 minutes. Leave in the tin to cool and then turn out.
